Ingredients
- 2 (15 oz) cans black beans, drained and rinsed
- 1/2 cup panko breadcrumbs
- 1 large egg
- 1/2 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 3 tbsp vegetable oil
- 4 slices cheddar
- 4 hamburger buns
- 1 tomato, sliced
- 4 lettuce leaves
- Salt
Steps
- Pat the beans dry with a clean towel. Mash them in a bowl with a fork, leaving some whole.
- Mix in the panko, egg, onion, garlic, cumin, paprika and 1/2 tsp salt.
- Shape the mixture into 4 patties about 3/4 inch thick.
- Heat the oil in a large skillet over medium heat. Cook the patties for 5 minutes per side, until crisp outside and hot in the center (160 °F inside).
- Lay a slice of cheddar on each patty for the last minute and cover the pan so it melts.
- Serve in the buns with the tomato and lettuce.
