Ingredients
- 1 1/2 cups short-grain rice
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1 tbsp sugar
- 1 tsp grated fresh ginger
- 1 1/2 lb boneless, skinless chicken thighs
- 1 tbsp vegetable oil
- 1 large head broccoli, cut into florets
- 1 tsp sesame seeds
Steps
- Cook the rice according to the package directions.
- Stir together the soy sauce, mirin, sugar and ginger in a small bowl.
- Pat the chicken dry with paper towels and wash your hands.
- Heat the oil in a large skillet over medium-high heat. Cook the chicken for 5 to 6 minutes per side, until golden.
- While the chicken cooks, steam the broccoli in a covered pot with 1 inch of water for 4 minutes, until bright green and tender.
- Pour off the fat and add the sauce. Simmer for 2 to 3 minutes, turning the chicken, until glossy and cooked through (165 °F inside).
- Slice the chicken, spoon the sauce over it and sprinkle with sesame seeds. Serve with the rice and broccoli.
