Ingredients
- 1 1/2 cups short-grain rice
- 3 tbsp white miso
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp honey
- 4 salmon fillets (6 oz each)
- 1 lb green beans, trimmed
- 1 tbsp vegetable oil
- 1 tsp sesame seeds
- 2 scallions, sliced
- Salt
Steps
- Cook the rice according to the package directions.
- Set an oven rack about 6 inches from the broiler and heat the broiler. Line a sheet pan with foil.
- Stir the miso, mirin, soy sauce and honey into a smooth paste.
- Lay the salmon on the pan, skin side down, and spread the glaze over the tops. Wash your hands.
- Toss the green beans with the oil and a pinch of salt and arrange them around the fish.
- Broil for 8 to 10 minutes, until the glaze is browned in spots and the salmon flakes easily (145 °F inside). Cover with foil if the glaze darkens too fast.
- Sprinkle with the sesame seeds and scallions and serve with the rice.
