Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup water
- 4 large eggs
- 6 cups finely shredded green cabbage
- 4 scallions, sliced
- 1/4 cup ketchup
- 2 tbsp soy sauce
- 1 tbsp honey
- 1/4 cup vegetable oil, divided
- 1/4 cup mayonnaise
Steps
- Whisk the flour, baking powder and salt with the water and eggs into a smooth batter.
- Fold in the cabbage and scallions.
- For the sauce, stir together the ketchup, soy sauce and honey.
- Heat 1 tbsp of the oil in a 12-inch nonstick skillet over medium heat. Spoon in a quarter of the batter and spread it into a round about 6 inches wide and 3/4 inch thick.
- Cook for 5 minutes, until golden underneath. Flip and cook for 5 to 6 minutes more, until firm in the center (160 °F).
- Slide the pancake onto a baking sheet and keep it warm in a 200 °F oven. Cook the remaining three pancakes the same way, adding 1 tbsp of the oil each time.
- Brush the pancakes with the sauce, drizzle with the mayonnaise and serve.
